Chocolate Peanut Butter Quinoa Squares

I’m always happy when I get to bake and not feel guilty about eating my creations afterward.  And I’m even happier when I come up with something that covers the breakfast, dessert and snack category.  These granola-esq squares will satisfy all your chocolaty-peanut buttery cravings, while filling you with some protein and healthy fat to keep ya full.

1/2 cup peanut butter
1/4 cup coconut oil
1/4 cup honey
2 tbsp cocoa powder
-Melt these together in small pot or in microwave till combined and liquidy

1 1/2 cups rolled oats (not instant)
1 cup cooked quinoa
1/4 cup pumpkin seeds
1/4 cup dark chocolate chips
2 tbsp ground flax seed
2 tbsp chia seeds
4 tbsp sesame seeds (black or white)
1/2 cup shredded coconut or dried cherries (optional)
-Mix all these ingredients together in a large bowl

-Allow liquid mixture to cool to room temp after melting (this will prevent the chocolate chips from totally melting and will keep their shape a bit better)
-Line a 9×13 cake pan with parchment paper
-Mix the cooled peanut butter mixture into the dry ingredients till combined
-Press mixture firmly into pan
-Bake at 350 degrees for 20 min
-Allow pan to cool first then pop the pan into the freezer for 30 min
-Cut into 24 squares
-Keep in fridge or freezer for squares to stick together well (room temp squares will be sticky and fall apart)
