Peachy Ricotta Muffins

These muffins are best made in August, when peaches are at their peak in southern Ontario.   The creamy ricotta cinnamon spread is an absolute must and take these muffins to the next level of YUM!  This recipe is pretty much doubled in size so you can make extra big muffins, plus freeze some away for later.

3 cups whole wheat flour
2 cups white flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt
-mix the following dry ingredients together in a large bowl

2 cups brown sugar
1 cup creamy ricotta
1 cup vegetable oil
4 eggs
3 tsp vanilla extract
-blend the following liquid ingredients together, either in a stand mixer with whisk attachment or with hand beaters
-slowly add the dry ingredients into wet ingredients and mix until combined

2 cups fresh peaches, peeled and diced (use very ripe freestone peaches, so that its easy to peel the skin off with a paring knife, and pop out the pit)
-stir peaches into muffin batter gently, until distributed throughout batter
-preheat oven to 350F
-use silicone muffin pans and divide batter
-makes 18 large muffins or 24 regular muffins

turbinado sugar for dusting muffin tops
-sprinkle tops of muffins with turbinado sugar to create a crunchy crust
-bake muffins for 35-45 minutes until toothpick comes out clean when inserted into middle of muffin

Ricotta spread
1 cup ricotta
1 tbsp honey
1 tsp cinnamon
-mix these ingredients in a small bowl, keep in fridge till ready to use
-smother the inside of warm peach muffins with ricotta spread
