Better than Bark


This is my go to recipe for something quick & easy and it’s great because you can fancy it up with your own personal tastes.  It’s one of those addictive treats that people just can’t stop munching on and they are always puzzled as to what its made of.  Well the secret is below and the possibilities of flavours are endless.  I make double and triple batches and store in the freezer to serve when unexpected guests stop by or when I’m showing up to a get together and I don’t wanna come empty handed.  It’s perfect for a cookie exchange too….just go make it already ok!

35-40 saltine crackers (soda crackers with salt… the secret ingredient)
-line shallow baking pan with aluminum foil
-arrange crackers with salted side up in one layer, covering the entire pan
-heat oven to 325 degrees

3/4 cup butter
3/4 cup brown sugar
-in a saucepan over medium heat melt the butter and sugar together
-allow this mixture to bubble and caramelize together for 3 minutes without stirring
-pour mixture over crackers and spread evenly to cover every cracker (an offset spatula works best for this)

1 cup semi-sweet chocolate chips (or dark, white, butterscotch, peanut butter chips…. any flavour you prefer)
-put pan with crackers/butter/sugar into oven and bake for 5min
-after taking pan out sprinkle chocolate chips over top and allow them to melt for 5min
-spread melted chocolate all over top to make a smooth even layer

1/2 cup pecans (coconut, cranberries, walnuts, peanuts, dried apricots, candy cane, coarse salt, cayenne, cinnamon, candied ginger, orange zest, … anything you like)
-sprinkle over top of melted chocolate and lightly press in to make it stick
-put pan in fridge for an hour or until hard
-peel off aluminum foil and cut into haphazard triangles

***for this version of my ‘better than bark’ I did one pan with semi-sweet chocolate and pecans, and another with shredded coconut, coarse salt and cayenne for a sweet, salty and spicy treat!***
